Manual harvesting allowing selective sorting. De-stemming, crushing, light pumping over and punching down in stainless steel vats, by grape variety and blend. Devatting at the end of sugar and pressing.
The wines are aged in barrels (50% new) for 16 months.

Ideally between 5 and 10 years. Enjoy at 14°C.
